I have noticed that photos of large impressive dining halls in the 1800s often have the African American wait staff posed in the photo (which especially being an indoor scene, would require deliberate posing for the long exposure.) I have seen this in images from other hotels in NY as well as an 1864 convention hall in Philadelphia. ( • Large Dining Room, Great Central Fair, 186... ) Some times there is just a little staff present and they are seated, and other times (like this) they are standing and it appears as if they are showing off the number of staff available.
