You’re about to find out how much flavors you can pack in a simple pork ribs dish—this is my garlicky, peppery version of Adobo in Fish Sauce!

Ingredients:

2 lbs pork ribs (you may use pork belly or pork butt as well)
1 head of crushed garlic
1 tbs slightly grounded black pepper
4 tbs suka (vinegar)
4 tbs patis (fish sauce)
3 pcs laurel leaves
4 tbs cooking oil


The Process:

1. Heat the pan and arrange the meat in it, then add the minced garlic, pepper, vinegar, fish sauce, laurel leaves and cooking oil one by one.
2. Leaving it uncovered without stirring, bring it to boil for 5 to 7 minutes on medium to low heat.
3. Once you achieve that, you can now stir it gently to combine all the flavors. Taste it and adjust the flavors to your liking.
4. When everything is settled, cover and lower the heat. Simmer it for about 25 to 35 minutes or until the liquid is reduced and begins to render fat and the meat is tender and turning golden brown.
5. Turn off the heat and serve generously. Best to pair with steamed rice.
