The best moist, soft and delicious Banana Carrot and Oats Muffin Recipe you'll ever try. Quick and very easy recipe.

Ingredients:
210g/ 1¾ cup all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
¼ tsp ground ginger
¼ tsp ground nutmeg
113g/ ½ cup butter, melted
about 2 large/ 1 cup carrots (finely shredded)
about 2 medium bananas/ 1 cup bananas, mashed
80g/ 2/3 cup granulated sugar
50g/ ¼ cup brown sugar
2 large eggs, room temperature
2 tsp vanilla extract
2 - 3 tbsp rolled oats for topping

Bake in the oven 190C/375F for about 20-22 min. Cool in the tin for 5 min, then transfer to a wire rack to cool completely. Enjoy!
