Recipe Breakdown:
1. Mexican Seasoning
Ingredients:
1 tbsp Kashmiri Red Chilli Powder
2 tsp Cumin Powder
1 tsp Coriander Powder
1 tsp Salt
2 tsp Oregano Powder
2 tsp Onion Powder
2 tsp Garlic Powder
Method:
Grind all the spices together in a mixy jar until well combined. Transfer to a bowl.
2. Paneer Stir Fry
Ingredients:
200g Paneer
1/2 cup Onion (sliced)
1/2 cup Bell Pepper (sliced)
2 tbsp Olive Oil
2 tbsp Mexican Seasoning
1 tbsp Chopped Garlic
1 tbsp Lemon Juice
1 tsp Salt
Method:
Heat oil in a pan, sauté garlic and onion, then add bell peppers and sauté on high flame. Add paneer, seasoning, salt, and lemon juice. Mix well and transfer to a bowl.
3. Lemon Coriander Rice
Ingredients:
3/4 cup Brown Rice
2 tbsp Butter
2 tbsp Fresh Coriander Leaves
1 tbsp Lemon Juice
Salt (to taste)
Method:
Soak rice for 30 minutes, then pressure cook with 1:2.5 rice-to-water ratio. In a pan, melt butter, add cooked rice, coriander, salt, and lemon juice. Sauté and transfer to a bowl.

2 tbsp Olive Oil
1 cup Rajma (Kidney Beans)
1 tbsp Garlic (chopped)
1/2 cup Onion (chopped)
1/2 cup Tomatoes (chopped)
1 tbsp Green Chilli (chopped)
1 tsp Jalapeño (optional)
2 tbsp Mexican Seasoning
Salt (to taste)
Method:
Soak rajma for 6 hours and pressure cook until soft. In a pan, heat oil, sauté garlic, onion, and tomato, then add green chilli, jalapeño, and cooked rajma. Add seasoning and cook until the water reduces. Transfer to a bowl.
5. Fresh Salsa
Ingredients:
1 cup Onion (chopped)
1 cup Tomato (chopped)
1/2 cup Boiled Corn
Handful of Coriander Leaves
1 tbsp Green Chilli (chopped)
1 tbsp Lemon Juice
Salt (to taste)
Method:
Mix all the ingredients in a bowl. Set aside.
6. Burrito Sauce
Ingredients:
1 cup Hung Curd (strained)
1 tbsp Garlic (chopped)
2 tbsp Chilli Sauce
2 tbsp Tomato Sauce
2 tbsp Mexican Seasoning
1 tbsp Lemon Juice
Salt (to taste)
Method:
Strain the curd to make it thick, then mix it with garlic, seasoning, sauces, and lemon juice. Set aside.
Assembling the Burrito Bowl / Wrap:
For Burrito Bowl:
Layer lemon coriander rice, paneer stir fry, refried beans, salsa, lettuce, and avocado in a bowl. Drizzle with burrito sauce and sprinkle grated cheese on top.
For Burrito Wrap:
Take a tortilla wrap, add lemon coriander rice, refried beans, paneer stir fry, salsa, lettuce, and avocado. Sprinkle with cheese, fold the wrap, and toast on both sides on a hot tava until crispy. Serve hot.
