सुकुटी चाडपर्वमा मासु प्रचुर मात्रामा पाइने हुँदा यसलाई पछि सम्म राख्नको लागि दाउराको आगोमा धुवाँ सँगै सुकाइन्छ । प्रत्येक वर्ष दशैं र तिहारपछि राँगा या भैंसीको मासुबाट अचार बनाइन्छ । सुकुटी फल मासु प्रयोग गरी बनाइन्छ जुन बाक्लो लहरी बनाएर काटिन्छ र धुवाँमा केही घण्टाको लागि दाउराको चुलोमा झुण्ड्याइन्छ। बिस्तारै मासु सुकाउन यसलाई आगोबाट पर्याप्त उचाइमा राखिन्छन् र तयार भए पछि सुकुटीलाई एक वा दुई दिनसम्म घाममा सुकाइन्छ। र यसको विभिन्न परिकार हरु का साथ सुकुटी को अचार बनाउने गरिन्छ ।


Recipe for sukuti ko Achar :

200-250 gm buffalo sukuti
5-6 tablespoons ginger paste
2-3 tablespoons garlic paste
6-8 fresh green/red chillies
1-2 tablespoons red chilli powder ½ tablespoon turmeric powder
1 tablespoon cumin and coriander powder mix
½ cup mustard oil
1 lemon
Salt as per taste

Method :
Cut the sukuti into small pieces. If it is too dry or tough to cut, smash it lightly with a pestle and soak in hot water for about half an hour to make it softer.

Heat about half a cup of mustard oil in a pan over medium heat. Add the sukuti pieces and fry for a few minutes. Then add the ginger and garlic paste, and cook until light brown.

Add the chopped fresh chillies, salt, and turmeric, cumin, coriander, and red chilli powder. Squeeze lemon juice and cook further for a couple of minutes while stirring occasionally. Turn off the heat and transfer all the mixture to a clean and dry glass jar.

Close the jar, and set aside for a week so that the sukuti will soak up all the spices and become more flavourful.
