Ingredients
· 1 medium eggplant
· 4 chicken breast fillets
· ½ teaspoon black pepper
· ¾ teaspoon salt
· 2-3 teaspoons oil (add more if needed)
· 2 large eggs, whisked
· 1 cup seasoned Italian breadcrumbs
· 1 cup marinara sauce (adjust to taste)
· 1 cup mozzarella cheese, grated
· ¼ cup parmesan cheese, grated (adjust to taste)
· 6-8 basil leaves

Method
Step 1: Preheat the oven to 425 degrees F.

Step 2: Cut the eggplant into ½ inch slices and set aside.

Step 3: Season each side of the chicken breast fillets with salt and black pepper.

Step 4: Heat 2-3 teaspoons of oil in a large skillet over medium high heat. Coat the eggplant slices with the egg wash followed by the seasoned breadcrumbs and place in oil. Fry for 2-3 minutes on each side or until golden brown. Drain excess oil on a paper towel and set aside.

Step 5: In the same pan, heat 2-3 teaspoons of oil over medium high heat. Coat the chicken breast fillets with the egg wash followed by the seasoned breadcrumbs and place in oil. Cook until the chicken is golden brown and almost cooked. Remove and set aside.

Step 6: In a casserole baking dish, layer the ingredients in the following order: marinara sauce, eggplant, marinara sauce, mozzarella cheese, parmesan cheese, marinara sauce, chicken breasts, marinara sauce, mozzarella cheese and parmesan cheese.

Step 7: Cover with foil but ensure that it does not touch the cheese and bake for 15 minutes. After 15 minutes, remove the foil and top with more mozzarella and parmesan cheese and bake for an additional 5 minutes or until cheese is melted.

Step 8: Remove from the oven and top with freshly chopped basil leaves and enjoy!
