Let's create a batch of traditional Vietnamese crystal candy using a special ingredient known as "Rong Sun," a type of seaweed deeply rooted in Vietnamese cuisine for centuries. This ingredient is celebrated for its high nutritional benefits and is commonly found in salads and herbal desserts across Vietnam.
Today, I'll guide you through the traditional process of making
Silky Gem Mút Rau Câu. But before we dive in, let's start by picking some fresh apples, which will be our second main ingredient.
Once you've gathered your fresh Rong Sun, make sure to thoroughly wash it. Next, cook it together with the fresh apples you obtained from your local farm. This cooking process might take a bit longer compared to using powdered forms of Rong Sun. Once the Rong Sun has completely dissolved, it's time to add pure cane sugar.
You can also use rock sugar or regular sugar if you prefer. After everything has dissolved, transfer the mixture to a tray and use a strainer for a clear, pristine appearance.
Now, you can add the food coloring of your choice and allow the mixture to set. After a couple of hours, you should be able to cut and shape your crystal candy into any form you desire.
