No BAKE Red Velvet Cake with No melt Buttercream Frosting recipe

cake ingredients:

2 1/2 cup all purpose flour
1 1/2 cup sugar
1 tsp baking soda
1 tsp salt
1 tbsp cocoa powder
1 cup buttermilk (subsitution: 1 tbsp white vinegar + Evap milk to complere 1 cup)
2 large eggs
1-2 tbsp red food color
1 tsp white vinegar
1 1/2 cups cooking oil(vegetable oil, canola oil, corn oil)
1 tsp vanilla extract

Procedure:

1) Preheat Improvised oven over high high heat for 10-15 minutes. For the steamer bring water(1 liter water) to a boil.
2) Prepare the lightly greased and floured cake pans
3) In a large bowl Sift the dry ingredients
4) In a separate bowl mix all the wet ingredients
5) Mix half of the dry ingredients and beat until just combined
6) Mix the rest of the dry ingredients and beat until well blended
7) Pour cake batter into the pans
8) Tap few times to release air bubbles
9) Turn down the heat from the improvised oven and place your cake inside then cover it
10)place the seconds batch of the cake batter into the steam bowl and cover.
Note: wrap the lid of the steamer with clean cloth to avoid water from dripping into our cake batter.
11)Turn the heat down and place the steam bowl over the simmering water.
12)For the steamed cake: Steam for 35-45 min. and do the toothpick check
When you check the cake and if the toothpick comes out with few moist crumbs it's okay as long as it is not cake batter.
Turn off the heat but do not take the cake out yet. Let it set for 10 min. inside with the lid on. In this way your cake will not shrink.
13)For the improvised oven: Cook for 35-40 min. and do the toothpick check.
When you check the cake and if the toothpick comes out with few moist crumbs it's okay as long as it is not cake batter.
Turn off the heat but do not take the cake out yet. Let it set for 10 min. inside with the lid on.In this way your cake will not shrink.
14)Cool cakes in the pans for 5 minutes
15)Unmold the cakes and cool compelely before frosting
16)Get rid of the cake dome. make crumbs from cake scrap
17)Cut cake unto half and spread frosting
18)Cover with the other layer of cake
19)to crumb coat apply a thin layer of frosting then chill for 30 min. to 1 hr. Until the frosting is firm
Then apply a thicker and even layer of frosting.
20)Then decorate your cake.



Buttercream Frosting #1 ingredients:

4 1/2 tbsp all purpose flour
225 grams butter, cube and softened at room temperature
250 ml all purpose cream
1 cup sugar

Procedure:

1) In a sauce pan combine sugar, flour and all purpose cream then whisk together.
2) Turn on the gas stove and cook over low heat. Bring to a boil and whisk continuously.
3) Cook for 1 minute.
4) transfer the paste into a container. Cover and Chill for 2 hours.
5) Beat the butter until smooth and fluffy and the color is light.
6) Add cold paste a tablespoon at a time. Mix well after each addition.Set aside


Buttercream Frosting #2 ingredients:

1/2 cup shortening
1/2 cup butter
1 cup granulated sugar or 4 cups powdered sugar
pinch of salt
2 tbsp milk
1 tsp vanilla extract

Procedure:

1) beat butter and shortening until smooth, fluffy and the color is light
2) Gradually add the sugar and continue mixing
3) Add milk
4) Add the vanilla extract and salt
5) Mix until the sugar dissolves. about 10 minutes.

Tip: better to use Powdered Sugar for this recipe
