Decorating Raw Desserts with Susan Guiterriez

I am Susan Gutierrez, Raw Fresno’s Pastry Chef. Originally I wanted to become a dentist. My art took over that Idea so I ran a printing press for 10 years and also did graphic design and illustration for print design. Yes, I do still draw all the time.

Since I am open to adventure, I applied at a French Bakery and was hired in the pastry and cake department. On the first day the owner and I worked on a wedding cake. Learning along the way by practice and using my art skills I have worked 30 years in various bakeries, restaurants and a trade school.

After a good 20 plus years I got tired of shoveling sugar. I knew there was a better way people could have a special dessert for a life living celebration. I would experiment with some raw desserts, but there was far more to learn.

So I reached out to Chef Naomi and on the first day she showed me how a raw cheesecake could be made. That day I had my first hand at decorating it.
From there, I have not stopped learning, improving and creating!

Sweet Potato Blondies with Date Fluff Icing

160 grams steamed Hannah sweet potato peeled
2 Cups Almond Flour
1 Cup Coconut Flour
1 1/2 cups dates cut in small pieces- use a scissor
2 Tablespoons Mesquite Sugar
1 Tablespoon Vanilla
1/2 cup Date Syrup or Maple Syrup

Date Fluff
1 cup packed dates soaked
