Recipe:
4 garlic cloves of roughly chopped garlic
about a half cup or so of pine nuts
About 3 tightly packed cups of basil
a nice hunk of Parmigiano Reggiano cheese, grated to about TK cups
about 3/4 cups olive oil
a squeeze of lemon (olive oil)
salt and pepper

Place the garlic and pine nuts in the bowl of the food processor and pulse until nice and crumbly. Add the basil, a drizzle of olive oil, a healthy pinch of salt and some pepper, and pulse until it has reached your desired texture. Transfer it to a mixing bowl and stir in olive oil, grated parmesan, a squeeze of lemon, salt and pepper, until it has your desired taste. It should be punchy, sharp and creamy but not too loose (you'll be adding more oil and cheese with the pasta).

To serve with pasta, simply boil pasta until nicely salted. Blanch a small handful each of diced potatoes and green beans until they are tender and cooked, then set them aside. Add the pasta and cook it until Albert Dente, reserving some cooking water. Then, add the pasta, green beans and potatoes to a large mixing bowl, and add pesto until it is at your desired ratio, adding pasta water, additional cheese and olive oil until you have a glossy pasta that is not too tight. If you somehow made it too loose, add more cheese.

Save remaining pesto in the refrigerator or freezer.
