For all pork sorpotel enthusiasts, this tempting air fryer pork sorpotel recipe offers a lighter take on the classic dish. It's a quick and simple recipe that uses an air fryer to guarantee well-fried and crispy pork cubes, opting for powdered spices instead of whole ones. This version uses less oil and is sure to fulfill the cravings of pork sorpotel lovers.
Ingredients:
1/2 kg pork cut into small cubes (less fat)
1 cup water
2 onions (diced)
1 tbsp ginger garlic paste
2 green chillies (slit)
1/4 tsp. turmeric powder
1 tbsp. kashmiri chilli powder
1/2 tbsp garam masala powder
1 tbsp. tamarind pulp
1 tbsp. palm vinegar
1/2 tbsp. jaggery
Salt to taste
Oil for frying
Method
Wash & clean the pork cubes
Cook the pre-cut pork cubes with turmeric and salt till it is parboiled for 15 mins on low-medium heat
Collect the boiled pork stock in separate bowl for later use in the recipe
Air fry the pork cubes at 180 degree celsius for 10 mins. Keep it aside
In same pot add little oil and fry green chillies.
Add diced onion, sprinkle salt and sauté till translucent
Add ginger garlic paste and sauté for a min
Add Kashmiri chili powder and garam masala powder, mix well and then add pork stock
Add tamarind pulp and jaggery
Add the air fried pork meat
Add palm vinegar and adjust salt
Cover the pan and let it simmer for 10 mins
Pork sorpotel is ready to be served. Enjoy

Tips :
1. It is important to pay attention to the cook time as pork cubes may turn dry & tough. Each air fryer is different, and the exact time of roasting may differ slightly depending on the one you have. I would recommend checking every 3 minutes or so after first roasting the pork cubes.
