After primary fermentation the product is now known as green beer. Even though it is drinkable, the beer is not quite finished and has certain undesirable flavours and lacks carbonation. Beer maturation process is used to allow beer to rest and mature for a period of time in order to develop more desirable flavour characteristics, before it is packaged.
