Gluten Free Pasta Dough Recipe:
1 cup (180g) of Gluten Free Flour [my favorite is Cup4Cup], plus more for kneading
100ml Warm Water

Filling of choice: I combined 1/2 cup of ricotta and 1/4 cup of parmigiano reggiano, but feel free to alter this by adding fresh herbs, additional or replaced cheeses, or dairy free options depending on your preference! Make your filling prior to your pasta, and keep refrigerated to ensure it's cold enough to keep it's form in your ravioli!

Common Questions & Things to remember when making fresh pasta…

How much flour do I need to make fresh pasta & How do I know when my pasta dough is ready?
You need as much flour as it takes until your dough is no longer sticky & comes together smooth to the touch

How long does it take to cook fresh pasta?
Fresh Filled Gluten Free Pasta is ready to cook immediately in salted boiling water for 4-5+ minutes depending on the thickness of your sheet.

What is the best way to store Fresh Pasta for optimal freshness? Do you need to thaw frozen pasta?
Pasta can also be frozen for weeks, best within 1-2 weeks for ultimate freshness, but they will stay good for months! Do Not Thaw, stick directly into boiling salted water, cook time is the same as fresh, maybe a tad longer.

How much time do I need to set aside to make fresh pasta?
Knead Time: 2-3 mins, for GF it's just until fully mixed and smooth!
Rest Time: No rest time for Gluten Free pasta since there is no gluten to rest!
Rolling Out & Cutting/Filling By Hand: 20+ mins

Is fresh pasta really that much better?
Yes, yes it absolutely is better. And this gluten free pasta will blow your mind - it tastes so similar to regular homemade pasta!
