Hey everyone, today I'll demonstrate a simple method to whip up an Asian plum sauce – ideal for Christmas dinner, pairing with cheese and crackers, or complementing duck and similar dishes. So, hang tight and enjoy this video!

600g fresh plums, pitted and chopped (peel left on)
1/3 cup apple cider vinegar
1/3 cup brown sugar
2 tbs light gluten-free soy sauce
2 tbs minced garlic
2 tbs minced ginger
1/4 tsp cinnamon powder
1 tsp Chinese 5 spice powder
Pinch of salt

Method:

1. Combine all ingredients in a medium saucepan, bringing them to a boil over medium heat.
2. Simmer on reduced heat for 25 minutes until plums are soft, and the sauce slightly thickens.
3. Remove from heat, transfer the sauce to a food processor or blender, puree until smooth, and return to the pot. (Alternatively, use an immersion blender carefully in the pot with caution for hot liquids).
4. Reheat the plum sauce to a boil, then ladle it into hot, sterilized jars, leaving a 1/4-inch headspace.
5. Secure sterilized lids and rings on the jars and process for 15 minutes in a boiling water bath.
6. After processing, place jars on a towel to rest for 24 hours. Verify seals before storing.
