For the Sauce:
1/2 tea cup vegetable oil or olive oil
1 tablespoon tomato paste
3 medium tomatoes (grated)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes
3-4 cloves garlic (chopped)
1/2 tea cup hot water (optional)

Main Ingredients:
1 kg eggplant (peeled in stripes, cut into large cubes)
3 green bell peppers (seeds removed, diced)
2 medium red bell peppers (seeds removed, diced)
5-6 cloves garlic (diced)
1 kg chicken breast or thigh (diced)

Written Recipe (English)
Prepare the Sauce: Heat the oil in a pan. Add the tomato paste and sauté. Add the grated tomatoes, salt, black pepper, and red pepper flakes and sauté for a few more minutes. Add the chopped garlic and optional hot water, cook for 1 more minute, and remove from heat.

Prepare Vegetables and Chicken: Peel the eggplants in stripes and cut them into large cubes. Remove the seeds from the peppers and dice them. Also dice the garlic. Dice the chicken into cubes.

Mix: Place all ingredients (eggplant, peppers, garlic, chicken) in a baking dish. Pour the prepared sauce over them. Mix well with your hands to ensure all ingredients are coated with the sauce.

Bake: Flatten the top and press down lightly. Cover with a piece of wet and crumpled parchment paper. Bake in a preheated oven at 220°C (430°F) for 40 minutes.

Brown: Remove the parchment paper. If it's too thick, you can add some hot water. Continue cooking uncovered for another 10-15 minutes until the top is browned.

Serve: Serve hot, with rice or yogurt on the side. Enjoy your meal!

Tips
If you salt the eggplants and let them sit, they will release bitter water and taste better.

Using chicken thighs can make the dish more juicy and flavorful.

You can prepare the sauce a day in advance to save time.

Baking time may vary depending on your oven, so check while cooking.

If you prefer it more saucy, you can add 1 tea cup of hot water before putting it in the oven.
