Tandoori Chicken Tikka-
Ingredients:
• 2 chicken breasts, cut into tandoori-sized pieces
• 1 tbsp ginger-garlic paste
• 1/2 cup yogurt
• 2 tsp turmeric powder
• 2 tsp red chili powder
• 1/2 tbsp coriander powder
• 1/2 tbsp cumin powder
• 1 tsp black salt
• A handful of kasuri methi
• Salt, to taste
• 2 tbsp lemon juice
• 1 piece of coal
• 1 tsp ghee
Instructions:
1. Marinate the chicken with ginger-garlic paste, yogurt, turmeric, red chili powder, coriander powder, cumin powder, black salt, kasuri methi, salt, and lemon juice. Mix well.
2. For a smoky flavor, heat a piece of coal, place it in a small bowl, pour ghee on it, and cover with a lid for a few minutes.
3. Cook the chicken in the air fryer using the preset chicken option.
4. Serve with green chutney, a sprinkle of chaat masala, and a squeeze of lemon juice.
Broccoli Mushroom Tikka-
Ingredients:
• 30g cashews, soaked
• 30g melon seeds, soaked
• 30-40g paneer
• 1/4 cup yogurt
• A pinch of kasuri methi
• Salt, to taste
• 2 tsp cumin powder
• 1 whole broccoli, blanched
• 200g mushrooms
Instructions:
1. Blend cashews, melon seeds, paneer, yogurt, kasuri methi, salt, and cumin powder into a smooth marinade.
2. Blanch broccoli florets for 2-3 minutes and then transfer to cold water.
3. Apply the marinade to the broccoli and mushrooms.
4. Cook in the air fryer using the kebab preset option.
5. Serve with green chutney, a sprinkle of chaat masala, and a squeeze of lemon juice.
Pahadi Paneer Tikka-
Ingredients:
• 1/2 cup coriander leaves
• A handful of mint leaves
• 2-3 green chilies
• A pinch of kasuri methi
• 10-12 garlic cloves
• Salt, to taste
• 1 tsp turmeric powder
• 1 tsp coriander powder
• Juice of 1 lemon
• 1 tbsp besan (for binding)
• 200g paneer, cut into rectangles
• 100g bell peppers, cut into rectangles
Instructions:
1. Blend coriander leaves, mint leaves, green chilies, kasuri methi, garlic, salt, turmeric powder, coriander powder, and lemon juice into a smooth paste.
2. Add besan to the paste for binding.
3. Marinate the paneer and bell peppers with the mixture.
4. Cook in the air fryer using the tikka preset option.
5. Serve with green chutney, a pinch of chaat masala, and a squeeze of lemon juice.
