Slow cooked meats are the easiest meal. Why? Coz you can just throw everything in together and cook it however you like. In a slow cooker, on the stove (very low and slow), in the oven, or like I have here, in the pressure cooker! I've got a stove top cooker but you can get an electric one if you like that you don't have to watch so closely. It's on my wish list!

Cook once, eat twice my friends!

Here's a guide to what I used. It's easy to adjust to your own likes.

2kg of stewing meat - think shanks, gravy beef (shin), lamb shoulder, pork scotch, osso bucco
600g bottle of tomato puree/passata
2 cups of tomatoes or one tin
4 cups of diced vegetables (or blitz them to hide them from the kids!)
2 teaspoons himalayan salt
1 teaspoon of seaweed flakes
1 solid handful of fresh herbs or 1 tablespoon or dried mixed herbs
water or broth to cover

Throw it all in a pot, slow cooker or pressure cooker. Cook in the oven at 180˚C for 30 minutes, then turn down to 140˚C for 3-4 hours or slow cooker on high for 4-6 hours. It all depends on the size if the meat so just check along the way.

Pressure cooker: bring to a full steam on a higher heat, gradually turn it down to maintain the steam (or an electric one will do this for you) for 40 minutes. Allow the steam to release slowly and safely.
