材料 :
排骨 500g
马铃薯 2粒
小番茄 几粒

香料 :
红葱 1 粒
蒜头 2 粒
姜 1小块
红辣椒 2 条
小辣椒 2 条
孜然 小茴香 香菜籽 各加少许
咖喱叶
香茅

调味 :

白糖
生抽
椰浆

Ingredients (Diana Aw)
1. Pork ribs 500g
2. Potatoes 2pcs, cut smaller
3. Cherry tomatoes few pcs,
4. Curry leaves
5. Lemongrass 1stalk, halves and smashed
6. Curry powder 2tbsp with little water, mix to paste

Blend the following
1. Red onion 1pc, cut slices
2. Garlic 2 cloves, cut slices
3. Ginger a small piece, cut slices
4. Red chilli 2pcs, remove seeds, cut smaller
5. Chilli padi 2pcs, cut smaller
6. Coriander seeds little
7. Cumin seeds little
8. Fennel seeds little
9. Water little
10. Coconut cream

Seasoning
1. Salt little
2. Sugar little
3. Light soya sauce little

Method
1. Combine cold water with pork ribs in a pan, then add some Shaoxing wine. Let it boil under high heat. Remove any residues and boil for a minute before drain. Wash with running water till pork ribs are clean. Set aside
2. Sauté the potatoes till golden brown. Set aside
3. Stir fry the blended paste and cook till no water and fragrant. Then add in curry paste and stir fry. Add lemongrass and curry leaves and mix till fragrant. Add the pork ribs and mix well. Add some water just enough to cover the ribs. Let it boil under high heat. Lid on and turn to small heat and simmer for 25min
4. Add potatoes and mix. Simmer for 5min with lid on. Add seasoning and mix well till gravy has thickened
5. Off heat And add coconut cream and tomato. Mix well
6. Serve and enjoy! 💕
