⭐️GINGER SAUCE - Serves 2 - Double or Trip this recipe for more.

1 1/2 tbs chopped ginger
1 clove garlic chopped (optional)
1/4 cup brown sugar
2 tbs rice vinegar
2 tbs low sodium Kikkoman soy sauce
1 tbs corn starch
2 tbs + water (you will add more water in the pan after sauce thickens)

Mix ingredients together and place in non-stick sauce pan. Heat until boiling then simmer. When sauce thickens add in additional water until level of consistency that you want.

Use this to coat protein. I topped my tofu with the ginger glaze and garnished with white sesame seeds.

Use this on hamburger patties, meatballs, chicken drumsticks, pork, or tofu.

⭐️PASTA WITH VEGETABLE DISH

asparagus -chopped in 1 - 2" pieces (don't use the woody ends)
zucchini
a few cherry tomatoes
a few chopped Kalamata olives ( any olive will work)
1/8 of a cup of sun dried tomatoes
1 clove chopped garlic
1/2 cup fresh spinach
1 tbs nutritional yeast, or sub with parmesan cheese or leave out
shell pasta ( or your favorite pasta)
salt and pepper to taste

Cook pasta in heavily salted water until al dente. Make sure to reserve some of the starchy pasta water. Meanwhile saute vegetables in oil and add in chopped garlic towards the end, being careful not to burn. Add chopped olives and tomatoes towards end. Then add in cooked pasta along with a small amount of the pasta water. Add either nutritional yeast or parmesan cheese and pepper and stir. Add more of the pasta water if needed to thin out the sauce.

Sometimes I make the pasta with just the garlic and salt and pepper as a seasoning so you can leave out the nutritional yeast or cheese and it will still taste fine, just make sure to have the pasta water salted enough so that your pasta comes out perfectly seasoned. You may need to add salt to the vegetables too.
