Ingredients:
• 3 eggplants
• 3-4 garlic cloves, minced
• 1-2 green onions, chopped
• 3-4 tbsp coconut oil
For the Sauce:
• 2 tbsp oyster sauce
• 1 tbsp soy sauce
• 1 tbsp rice vinegar
• 1 tbsp sesame oil
• 1 tsp honey
• 1 tsp molasses
• 1 tsp chili flakes

Instructions:

Cut the eggplant into 5cm x ¼-1/6-inch slices. Soak in water with 2 tsp salt and 2 tbsp vinegar for 20 minutes.
Meanwhile, mix the sauce ingredients and chop the garlic and green onion.
Drain and dry the eggplant pieces. Fry the eggplant in 3-4 tbsp coconut oil over medium heat for 5-7 minutes, stirring occasionally. Add a little water if the eggplant begins to burn.
Once the eggplant is cooked through, add the sauce and garlic. Turn off the heat, then stir in the green onions. Mix well and serve.
