My very first time trying (and making) PALITAW, a delicious flat rice cake rolled in coconut flakes and sesame seeds. We also tried it Ilocano style with caramelized coconut flakes. Both versions were so simple to make and very delicious! Enjoy!

PALITAW:

Glutinous rice
Water
Coconut flakes
Brown & White Sugar (optional)
Sesame seeds

Mix the glutinous rice with cold water until the consistency is like play dough (thick but still pliable)
Roll into balls and press down in the middle to get a round disk.
Put the dough in boiling water until they float. Remove from water and roll in coconut flakes & sesame seeds.
