Mangalore style Vegetable curry
Vegetarian cooking in India is healthy, delicious, easy and so flavourful! A mixed Vegetable Curry that packs a flavour punch, is loaded with veggies and made with common spices that you might even already have in your pantry. This veg gravy can be made with a variety of vegetable combos. It pairs very well with rice, rotis and dosas.

List of ingredients

1/2 tsp mustard seeds
½ tsp Cumin seeds
1/2 of a small onion
1 tsp turmeric powder
Little tamarind
1 tsp coriander seeds
4 garlic pods
8-10 red chillies
7-8 peppercorns
¾ to 1 cup of grated coconut
1 ½ cup of Toor Dal
Salt to taste

For tadka

Coconut Oil
1 tsp mustard seeds
Few curry leaves
Vegetables of your choice
I have used 2 cups of cauliflower
3 potatoes
1tamato
8-10 pieces of drumstick
½ cup of green peas (You can use fresh or frozen)
