Giant Poppyseed, Pistachio and Apple Snail

This is a collaborative recipe between my mum Olga (her dough folding technique) and me (the filling). This is a very special recipe that I encourage everyone to make during Easter. My grandmothers, mum and aunts always made poppy seed rolls and this is basically an amplified version of those. If you do not want to use pistachios (as they are expensive), you do not have to - any nut you like will do.
