When I make this, I do the reverse of my "leftovers over greens" concept. The first day, I'll put everything over a bed of rice and greens and mix it up well. The second day is my favorite! I make a dolsot bibimbap (made in the clay pot shown in the video). All the same components are used except the lettuce, and it's much quicker because everything is already cooked and ready for you in the fridge! The rice gets crispy and the textures blend together so well!
