Urad (udad) dal vada is traditional recipe
,it is very spicy crispy in taste.
It is generally prepared in few regions of north Maharashtra on various festivals along with other festival food.
urad dal vada is always served with hot kadhi or curd.
In this video I am showing simple recipe of making tasty urad dal vada.

INGREDIENTS FOR 20-22 VADAS
2 Cups black gram (Urad dal)

2 tsp fenugreek seeds
(Methi dana)

1 tbsp fennel seeds

1 tbsp cumin seeds

1 tbsp dry coriander powder

1,1/2 inch ginger

1 tsp turmeric powder

1/2 tsp asafoetida(hing)

2 tbsp red chilly (as per taste)

2 tsp salt (as per taste)

6-7 chopped curry leaves

chopped coriander leaves

oil for frying

METHOD :

.Soke urad dal and fenugreek
seeds for 7-8 hours,or
overnight.

.Drain soked urad dal for 10
minutes.

.In mixer grinder,take cumin
seed +fenne seeds+ginger
+soke fenugreek seeds
and grind it.

.Then add soked urad dal in it
and again grind it by adding
very less water (1-2 tsp).till
smooth and fluffy batter form.

.Add red chilly powder,hing,
turmeric powder,dry coriander
powder,chopped curry leaves,
chopped coriander leaves salt
and 7-8 tsp hot oil in batter and
mix it properly with hands.

. wet hands with water,take
som batter in palm.keep it on
plastic paper.

. spread vada on plastic paper
evenly as shown in video.

. Take vada on wet palm,.
remove plastic paper and fry
vada in hot oil till golden crispy.

. Drain vada on kitchen tissue
paper.

. serve hot with kadi,curd or
tomato sauce.

Tips:
. keep flame high for 1 minute
when you add vada in oil then
keep medium flame till it
becomegolden while frying.

. use as less as possible water
while grinding urad dal.

. fry vada immidiatly after mixing
all spices or keep the mixure
in fridge till frying vadas.
