Honey wheat sourdough bread recipe

Ingredients:

570 grams active fed starter
450 grams whole wheat flour
180 grams bread flour
370 grams warm filtered water
70 grams honey
20 grams salt

Instructions:

Mix and knead for 10 minutes, by hand or in stand mixer on lowest setting with dough hook.

Wait 30 minutes then apply first set of stretch and folds. Wait 30 minutes more and perform a second set of stretch and folds.

Continue to ferment for an addition hour and a half to two hours.

Divide in half and shape two loaves.

Cold proof overnight.

Score and bake in preheated Dutch ovens at 450°f for 30 minutes covered and an additional 15 minutes uncovered.
