Forging a Shirogami Gyuto

Starting my gyuto builds from a chunk of Shirogami steel, or Hitachi White, from New Jersey Steel Baron. Spoiler alert, I've never had a blade sharper than this one. This steel is pretty much every bit of the hype it gets. I hope you enjoy!
