** French onion soup Recipe**
Ingredients:
Brown Onion 4 pieces
Butter 3 Tablespoons
Olive oil 1 Tablespoon
Sea Salt 1 Teaspoon
Black pepper 1 Teaspoon
Sugar 1 Teaspoon
Bay leaves 2 pieces
Thyme 2 pieces
Flour 3 Tablespoons
Beef stock 1000ml
Water 500ml
Brandy Cognac 3 Tbsp
French baguette 4 slices
Parmesan cheese 1 cup
Mozzarellas cheese 120g

Method:
1. Thinly slice onion
2. Put sugar and a small amount of water in a heavy-based casserole pot and cook until caramelised
3. Add onions and sauté on medium heat for 5 minutes
4. Turn to medium-low heat, add butter and continue cook for 5 minutes
5. Add salt and black pepper, stirring every few minutes, cook for about 30-40 minutes, until the onions are caramelised. Remember to stir from time to time to avoid burning
6. Add flour to the caramelised onions and sauté for a few minutes
7. Gradually add beef broth, stir well, use beef broth to remove all the delicious brown stuff at the bottom of the pot, then add water, thyme and bay leaf bring it to boil
8. Add brandy to the soup, stir and boil
9. Turn to low heat and cook for about 40-60 minutes, stirring occasionally
10. Spread the butter and Parmesan cheese on the French baguette slices and put them in the preheated 200c oven for about 15 minutes, or until golden and crispy
11. Put the cheese toast with the onion soup and enjoy it immediately
12. Another way to eat, you can add a teaspoon of brandy to the onion soup bowl to make it more fragrant and stronger taste
