Recipe:
1. In a bowl add 2 cups of hot water along with some salt and turmeric.
2. Also add cauliflower (Gobi) florets and let it sit for about 2-3 minutes.
3. Then take them out and drain the water and add these blanched florets into another bowl.
4. To these florets add 2 tbsps of all purpose flour (maida), 2 tbsps of corn flour, 1 tbsp of red chilli powder, some salt as per taste and mix everything well and coat with Gobi florets.
5. Add little water and mix well to form thick batter coating on the Gobi.
6. Now place a kadai on flame with oil for deep frying.
7. Once the oil is hot enough, on a medium flame drop these Gobi florets one by one and fry only for 50% and take them out on a plate.
8. Now the heat the oil on full high flame. When the oil is piping hot, drop these 50% fried Gobi florets and fry until they turn crispy and fried perfectly. Take them out on a plate.
9. Now in a small bowl add 1 tbsp of soy sauce, 1 tbsp of red chilli sauce, 1 tbsp of tomato ketchup, 1 tbsp of corn flour, 2 tbsps of water and mix everything well. The sauce mixture is ready.
10. Now place a pan on flame and add 2 tbsps of oil.
11. Add finely chopped ginger, garlic and spring onion shoots and sauté for few seconds.
12. Add finely diced capsicum and sauté till slightly cooked and add finely chopped onion.
13. Sauté till the onion is cooked and turns light golden in colour.
14. Now add the sauce mixture, 1 tsp of black pepper powder, 1/2 tsp of vinegar and some salt as per taste and on a low flame mix everything well.
15. When the sauce thickens and forms a thick consistency, turn of the flame and add the deep fried Gobi and coat well with sauce. Serve hot garnished with finely chopped onions and spring onion greens and alongside with ketchup ! :)
