[Ingredients]
All-purpose Sweet & Sour Sauce(This recipe makes 4-6 Crispy Fried Eggs):
Chinese Cooking Wine 16g (1Tbsp)
Soy Sauce 30g (2 Tbsp)
Sugar 42g (3 Tbsp)
Rice Vinegar 48g (4 Tbsp)
Water 75g (5 Tbsp)
Cornstarch 5g (2 Tsp)

Crispy Fried Eggs:
Large-sized Eggs 4
Oil 80g (⅓ Cup)
Salt 2g (⅓ Tsp)
Scallion 6g (1 Tbsp)

Steps:
Mix water and cornstarch. Stir well and set aside.
Add the Chinese cooking wine, light soy sauce, sugar, and rice vinegar to the saucepan. Cook over medium-low heat and stir to melt the sugar.
Add the mixture of water and cornstarch. Heat until “big bubbles become smaller ones”, turn off the heat, and set aside. Cover to keep warm if necessary.
Add a generous amount of oil into the frying skillet. Add some salt to prevent being sticky. Crack an egg into the skillet. Flip over when the bottom is set and in a light golden brown color. Cook to your favorite doneness. Fry the other eggs in the same way.
Add the fried eggs to a plate and pour the sweet and sour sauce while hot. Garnish with finely chopped scallions.
