腸粉芋絲肥牛菇菇煲

材料:
肥牛片半磅
腸粉10條
芋絲200克
黃芽白半斤
菇類400克
豆腐2磚
雞蛋一隻
辣椒仔2隻
芫荽適量

處理:
1. 預備醬汁:
a. 蒜蓉半湯匙
b. 豆瓣醬一湯匙
c. 黃豆醬一湯匙
d. 蠔油一茶匙
e. 胡椒粉適量
f. 糖一茶匙
加入清水500毫升,攪勻。
2. 黃芽白,切去根部不要,打橫切段,清水洗乾淨,擎乾水。
3. 菇類,清水洗乾淨,擎乾水。
4. 辣椒仔,去籽,切碎。
5. 芫荽,洗乾淨,切碎。
6. 腸粉,切段。
7. 豆腐,洗乾淨,一開八。
8. 牛肉,打直撕開兩份。
9. 預備好煲仔,最慢火加熱。

烹調:
1. 大火煲滾一鑊水。
2. 加入蔬菜,灼一分鐘,放煲內。
3. 加入菇類,灼一分鐘,放煲內。
4. 加入豆腐,灼一分鐘,放煲內。
5. 加入腸粉,灼10秒,放煲內。
6. 加入芋絲,灼10秒,放煲中心位置。
7. 攪勻醬汁,倒入煲仔內,大火滾起。
8. 另一邊,大火煲滾一鑊水,加入牛肉灼熟,熄火,夾起,放煲仔內。
9. 用餘下的醬汁加入適量生粉,攪勻,倒入煲仔內,冚蓋,大火滾起。
10. 雞蛋,打在碟上,小心放它在煲仔中間。
11. 灑上辣椒粒及芫荽碎。
12. 完成,可享用。

Beef and mushrooms claypot with cheong fun and silk knot

Ingredients:
Beef shortplate 0.5 lb
Cheong fun 10 Nos.
Silk knot 200g
Wongbok 0.5 catty
Mushrooms 400g
Tofu 2 cubes
Egg 1 No.
Chili 2 Nos.
Coriander appropriate amount

Preparation:
1. Prepare sauce:
a. Garlic sauce 0.5 tbsp
b. Chili bean sauce 1 tbsp
c. Soybean sauce 1 tbsp
d. Oyster sauce 1 tsp
e. Pepper appropriate amount
f. Sugar 1 tsp
Add in 500ml of water, mix well.
2. Wongkok, cut off its root. Cut in lengths horizontally. Rinse thoroughly. Drain.
3. The mushrooms, rinse with tap water. Drain.
4. Chili, remove seeds. Chop well.
5. Coriander, get it rinsed. Chop well.
6. Cheong fun, cut in lengths.
7. Tofu, rinse with tap water. Divide each into 8 shares.
8. The beef, tear it into 2 shares horizontally.
9. Get ready for a claypot. Heat up at the lowest flame.

Steps:
1. Heat up a wok of water at high flame.
2. Add in the vegetables, boil for a minute. Put in a pot.
3. Add in mushrooms, boil for a minute. Put in the pot.
4. Add in tofu, boil for a minute. Put in the pot.
5. Add in cheong fun, boil for 10 seconds. Put in the pot.
6. Add in silk knot, boil for 10 seconds. Put in the centre of the pot.
7. The sauce, stir well, pour into the pot. Heat up at high flame.
8. On the other side, heat up a wok of water at high flame. Add in the beef, boil well. Turn off fire. Pick it up and put in the pot.
9. The remaining sauce, add in appropriate amount of tapioca starch. Mix well. Pour into the pot. Cover it up. Heat up at high flame.
10. The egg, break it on a plate. Carefully pour it at the centre of the claypot.
11. Put chili and coriander chips on top.
12. Complete. Serve.
