Ingredients:

400 gms Paneer
Amul Mithai Mate (as per requirement)
1 tbsp Ghee
Elaichi daana (Cardamom seeds)
Badaam & Pista (for garnishing)

Instructions:
1. Prepare the Paneer Mixture: Crumble 400 gms of paneer finely in a mixing bowl. Make sure there are no large chunks, as smooth paneer gives a rich texture to the barfi.
2. Cook the Mixture: In a heavy-bottomed pan, add 1 tablespoon of ghee and heat it on low flame. Add the crumbled paneer and sauté it lightly for about 2-3 minutes.
3. Sweeten with Amul Mithai Mate: Add Amul Mithai Mate gradually, stirring continuously to incorporate it well. Adjust the amount of Mithai Mate to your desired sweetness and consistency.
4. Flavor with Elaichi: Add a pinch of elaichi daana (cardamom seeds) for a rich aroma. Mix well and cook the mixture on low flame until it thickens and leaves the sides of the pan.
5. Set the Mixture: Once the mixture is thick and smooth, transfer it to a greased plate or a tray. Spread it evenly to your desired thickness.
6.Garnish and Cool: Sprinkle chopped badaam and pista on top for a festive touch. Press them gently so they stick to the barfi. Let it cool at room temperature until it sets completely.
7. Slice and Serve: Once set, cut the malai barfi into squares or diamond shapes. Enjoy the rich, creamy texture and delicious flavor!
