Falsa Kulfi Recipe" is a delightful twist on the classic Indian frozen dessert, kulfi, incorporating the vibrant and refreshing flavors of falsa (also known as Indian berries or Grewia asiatica). This unique recipe combines the rich, creamy texture of traditional kulfi with the tangy and sweet taste of falsa, resulting in a treat that is both cooling and satisfying.

Ingredients:

2 cups milk
1/2 cup condensed milk
1/2 cup evaporated milk
1/2 cup fresh falsa (Indian berries), washed and cleaned
1/4 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
Chopped pistachios and almonds for garnishing
Instructions
Preparation of Falsa Puree:

In a blender, add the cleaned falsa berries and blend until you get a smooth puree. You can strain the puree to remove the seeds if desired, or leave them in for added texture.
Preparing the Kulfi Base:

In a heavy-bottomed pan, bring the milk to a boil. Reduce the heat and let it simmer, stirring occasionally, until it reduces to about half of its original quantity. This will give the milk a thicker consistency.
Adding Sweetness and Flavor:

Add the condensed milk and evaporated milk to the reduced milk in the pan. Stir well to combine.
Mix in the falsa puree, sugar, cardamom powder, and saffron strands (if using). Stir to incorporate all the ingredients.
Cooking the Mixture:

Cook the mixture on low heat, stirring continuously, for about 10-15 minutes. This helps the flavors meld and the mixture thickens further.
Cooling and Freezing:

Allow the kulfi mixture to cool to room temperature. During this time, it will thicken a bit more.
Pour the cooled mixture into kulfi molds or small individual containers. You can use traditional kulfi molds or any small containers you have on hand.
Garnishing and Freezing:

Sprinkle chopped pistachios and almonds on top of each kulfi for added crunch and visual appeal.
Final Freezing:

Place the kulfi molds or containers in the freezer and let them freeze for at least 4-6 hours, or until they are completely set.
Serving:

To unmold the kulfi, briefly dip the molds in warm water to loosen the edges.
Gently slide the kulfi out of the mold and onto serving plates.
