In the middle of winter, there's nothing better than sitting down to a bowl of hot stew. This is the season where I love to break out the soup and stew recipes. One that I love in particular is my Tuscan-style stew, which features white beans, Tuscan kale, and chicken. It's simple, hearty, and completely soul-satisfying!

Tuscany is famous for its bean-eating culture, and this recipe is very close to something you'd commonly eat in the region. Oftentimes, it wouldn't even include meat--it would be just the beans and kale. But I can't go without my protein, so I prefer this stew with the addition of richly flavored chicken thighs. And beyond that, tomato, onion, garlic, and rosemary form the foundation of this Tuscan-inspired stew.

Tuscan cuisine is all about a few, good-quality ingredients, flavored well, and cooked simply. That's the essence of this recipe. Buon appetito!
