Cardoon, The Multifunctional Permaculture Workhorse

Cardoon is one of those must have additions to any Permaculture landscape. Besides what I've outlined in the video, it also has an edible leaf stalk or rib, that once blanched, is similar to that of celery. Unlike the Artichoke cousin, its flowers are not edible, but the rib has the taste of Artichoke heart when prepared correctly.
The main reason for my love of this plant is that it makes an abundance of mulch every year that I can chop and drop around various others. The pollinator attracting ability is also very desirable, especially when planted under a fruit tree such as stone fruit.
