Chinese stir fried chicken macaroni is a delicious pasta recipe cooked in Chinese style with lots of veggies and chicken chunks.

Ingredients:
350 g Macaroni
400 g Chicken Thighs (skinless & boneless)
1 Yellow Onion (Medium - finely chopped)
3 Garlic Cloves (finely chopped)
1/2 inch Ginger (finely chopped)
1 Carrot (Small - diced)
1/2 Red Capsicum (diced)
1/2 Green Capsicum (diced)
1/2 Yellow Capsicum (diced)
1/4 Cup Spring Onion (finely chopped)
1 TBSP Oyster Sauce
1 TBSP Light Soy Sauce
2 TSP Dark Mushroom Soy Sauce
2 TBSP Oil
1/2 Toasted Sesame Oil
Salt & Pepper

Note:

If you are using mushrooms, corn, peas, broccoli, celery, stir fry the vegetable first then the chicken. After the chicken is fully cooked, then add the vegetables. Otherwise the macaroni will become soggy.

If you like spices, you can stir fry the chicken with a bit of sriracha chilli sauce.

This recipe is good to make kids eat vegetables. Skip the ginger if your kids don't like strong flavours.

Add more soy sauce and light soy sauce at the end if needed. This will depend if the water to boil the macaroni was seasoned properly.

Traditionally, in Chinese style macaroni ground meat is used.
