Fried Spring Rolls with Vegetables and Noodles

Spring Rolls
Makes 22pcs

1 tbsp oil
200g jicama (sengkuang), sliced into matchsticks
2 large carrots, sliced into matchsticks
Large handful of spring onions, sliced
1 red onion, diced
4 cloves garlic, diced
2 red chilies, diced
2 tsp salt or to taste
1 tsp white pepper
1 tbsp vegetarian oyster sauce
2 tsp mushroom seasoning
250g tofu crumbles (recipe:    • VEGAN Chinese Radish Cake with Insane Flav...  ) or precooked plant based mince, or shiitake mushrooms

22 spring roll sheets
Water to seal the spring rolls
Oil for deep frying

🔸Sauté onions on medium heat until they start to sweat and turn translucent. Then add carrots, jicama and salt.

🔸Cook until the carrots and jicama soften slightly. Toss in garlic and chilies until the garlic takes on colour.

🔸Season with mushroom seasoning, white pepper and vegetarian oyster sauce.

🔸Stir together then lastly add the baked tofu or plant based mince and spring onions. Leave to cool completely before wrapping the spring rolls.

🔸Once all the spring rolls are wrapped, deep fry in oil between 180°c - 185°c or 356°f - 365°f for 4-5 minutes until deep golden brown. Serve hot with sweet chili sauce.

Sweet Thai Chili Sauce

15 red chilies
5 bird's eye chilies (cili padi)
1 whole bulb of garlic (adjust according to your preference)
85ml water
150ml white vinegar
200g castor sugar
Salt to taste
1 tbsp cornstarch + enough water to make a slurry
