Brine:
1c water
1tbs rosemary
1tbs thyme
1/2 lemon
1tbs salt
1/2tbs honey (or sugar)

Bring everything except the chicken up to a boil, cool, then add chicken
Brine chicken for 24hrs
Pat dry before searing

Veloute:
2tbs butter
2tbs flour
1.5c chicken stock
1/4c heavy cream
1tsp salt (to start)
1/4tsp white pepper
2tbs chive puree (obviously optional lol)

melt butter with the flour, cook 5 minutes on low heat
add chicken stock and cream, bring to boil
reduce to the consistency you'd like

Chive Puree:
cover chives in oil
blend then freeze
