Hello, my sweet friends and welcome to another Foodie Friday! In today's video, we are making a super fast, super easy weeknight pasta. So fast, in fact, I didn't even speed anything up. This pasta is easy and so incredibly delicious - it will easily become a regular in your rotation! Bon appetite! XO - Tiffany

// EASY WEEKNIGHT SUN-DRIED TOMATO PASTA //
1 tbsp olive oil
1/2 cup diced sun-dried tomatoes
3-4 minced garlic cloves
1 cup half & half or heavy cream
1 cup parmesan cheese
handful of fresh spinach
1 package fresh linguine

Dice tomatoes and mince garlic - cook in tbsp oil over medium heat for 1 minute. Add half and half or heavy cream and parmesan cheese. Add handful of spinach. Cook fresh linguine only until floating (1-2 minutes). Drain (reserve a bit if you want to thin out your sauce) and add to pasta sauce. Coat pasta and serve.
