Recipe:
Ingredients:
2 cups cooked, chopped chicken
1 onion, diced
2 small potatoes, diced
2 cups milk or stock
2 tbsp flour
1 handful fresh parsley, chopped
1 handful fresh dill, chopped
1 tsp oregano
1 tbsp olive oil, plus extra for brushing
Pinch of salt
150 g feta cheese, crumbled
50 g Parmesan cheese, grated
2 eggs, lightly beaten
10 sheets phyllo dough (6 for the bottom, 4 for the top)
Directions:
Preheat the oven to 400°F (200°C).
In a skillet, heat 1 tbsp olive oil over medium heat. Sauté diced onion and potatoes with a pinch of salt until tender. Add chicken and cook for 2-3 minutes.
Sprinkle 2 tbsp flour, stir, and slowly add 2 cups milk or stock, cooking until thickened.
Mix in parsley, dill, oregano, feta, Parmesan, and the beaten eggs. Set aside.
Grease a pie pan. Layer 6 sheets of phyllo, brushing with olive oil between each layer. Add the filling.
Top with 4 sheets of phyllo, brushing with olive oil between layers. Trim and fold the edges inward.
Score the top with a knife and bake for 50 minutes or until golden.
Cool for 5-10 minutes before serving.
