INGREDIENTS
1.2 kg Pork shoulder/belly/leg
1/2 cup Soy sauce light
1/4 cup Soy sauce dark
2 bulbs of garlic cloves - peeled and crushed
1 cup Vinegar
2 Palm sugar - shaved or grated
5 Bay leaves
1 - 2 tbsp Peppercorns
270ml Coconut milk

METHOD
1. Ifyou have a bone in piece of pork, slice around the bone , then slice pork into 4cm (1.5 inch) cubes. Do NOT throw out the bone. If no bone, slice into 4cm pieces. Keep the fat and the skin on.
2. Combine with all ingredients (and the bone if you have it) except green onion and coconut milk and marinate in the fridge for 4 hours or preferred overnight.
3. When ready, preheat oven to 160c (320f)
4. Heat a large pan over high heat with a tbsp of pork lard or vegetable oil. When hot, brown pork for 2 minutes each side. Do in batches if pan is over crowded.
5. Add marinade liquid and pork to the pan. Bring to a boil and add 1/2 cup water and 1/2 your coconut milk. Place in the oven and cook for 2.5 hours. Checking every hour. If liquid is too reduced, add more water.
6. When pork is spoon tender, place over medium low heat, remove bone if you have one, and reduce until sauce is thick and glossy.
7. Serve with rice and garnish with thinly sliced spring onions if you like.
