Bring the vibrant flavours of Goa to your plate! 🌊 Today, we’re making two iconic Goan dishes: Gaon Sorak Curry, a tangy, coconut-based vegetarian curry 🥥, and Suran Fry, crispy and perfectly spiced yam slices. These recipes are packed with authentic coastal flavours, making them perfect for any occasion. 🍴✨

Follow along as I guide you step-by-step to recreate these delicious Goan specialities at home. 👨‍🍳

INGREDIENTS:

Kashmiri dry red chilies 4-5
Onion 1 (peeled and chopped)
Coriander leaves stalk 1 tbsp
Garlic 6-7 cloves
Chopped Ginger 1-inch piece
Black peppercorns 5-6
Roasted coriander seeds 2 tsp
Roasted cumin seeds 1 tsp
Grated fresh coconut 1½ cup
Turmeric powder ⅛ tsp
Salt and sugar as per test
Kokam 4-5 pieces (washed and soaked in 2 tbsp water)
Green chili 1 (slitted)
Curry leaves 5-6
Chopped coriander leaves 1 tbsp

METHOD:
1) Soak the dry red chillies in hot water for 1 hour. Deseed the soaked red chillies.
2) Combine deseeded red chilies, onion, coriander stalks, garlic, ginger, black pepper corns, coriander seeds, cumin seeds and grated fresh coconut together. Add ½ cup chilled water and grind it in to a very fine paste.
3) Add 1 cup water in the above paste. Cook it, stirring continuously till it starts boiling. Strain it through soup strainer for smooth texture. Shift it in a deep pan.
4) Add slitted green chili and curry leaves. Add salt, sugar, soaked kokam. Simmer this curry on low flame for 3-4 minutes.
5) Serve hot curry with rice and suran fry.

SURAN FRY
INGREDIENTS:

Elephant Yam (Suran) 250 gram
Tamarind 2 small pieces (5gram)
Garlic paste 2 tsp
Ginger paste 1 tsp
Chopped coriander leaves 1 tbsp
Black salt ¼ tsp
Salt to taste
Cumin seeds powder 1 tsp
Red chili powder 1 tsp
Turmeric powder ¼ tsp
Dry mango / Amchur powder ½ tsp
Oil 2 tsp

INGREDIENTS FOR COATING:

Semolina 2 tbsp
Rice flour 4 tbsp
Turmeric powder one pinch
Red chili powder ½ tsp
Salt to taste
Oil for roasting

METHOD:

1) Peel Elephant Yam (Suran). (Before peeling suran Grease your palm with oil to prevent itching sensation). Cut it in to medium thick and triangle shaped pieces. Boil 2 cups of water.
2) Add ½ tsp salt and 2 pieces of tamarind in it. Add sliced suran pieces in it and cook for 2 minutes till suran turn little soft. . (This process is very important to avoid itching sensation of the throat after eating suran fry.) Drain the water and remove tamarind pieces from the suran
3) Combine Garlic paste, Ginger paste, Chopped coriander, Black salt, Salt, Cumin seeds powder, Red chilli powder, Turmeric powder and Dry mango powder together to prepare the marinations. Mix it well and add few drops of water if the mixture is little dry. Add cooked suran slices in it. Rub them gently to coat the suran slices with marination.
4) Combine all coating ingredients and roll the marinated suran slices in that.
5) Pour 2 tbsp oil in a nonstick pan. Arrange suran slices in the pan and roast them on low flame from both sides till they turn golden and crispy.
