What's one of the most ubiquitous vegetables on the planet besides onion and garlic? Yes, you guessed it...beans...or rather, legumes as what we commonly refer to as beans - no matte what type - are part of the legume family. So today, we celebrate the noble bean.

I immediately thought of sharing my dad's recipe for Southwestern Baked Beans. I don't recall where he got the recipe from and to be honest, even if he was still with us he'd probably admit he couldn't remember either, but nonetheless, he used to make this dish whenever we had a BBQ and everyone loved it.

He called it Baked Beans, but I added the "Southwest" since it calls for chili. Uh, huh...you read that right. In fact, half the ingredients in this dish are canned, which means you can throw this together on the fly for almost any occasion at any time. In fact, I sometimes make it for its own sake because it's just so yummy.

I like baked beans and I like chili, but sometimes baked beans - especially canned - can be overly sweet. In this recipe however, the combination of chili, extra bacon and additional kidney beans really balance out the sweetness and the chili lends a little spice that wouldn't otherwise be there. I have a pretty good idea that once you try dish, you're gonna be hooked!
