Uzhunnu Vada – Medhu Vada – Urad Dal Fritters || Traditional Kerala Snack Recipe || All Tips & Tricks to make Perfect Restaurant Style Crispy Medu Vada at Home

(Uzhunnu Vada or Medu Vada is a traditional tea time snack / B/F side snack of Kerala /South India which is very common in each and every Kerala households. This doughnut shaped fritters is very crispy outside and soft inside. This snack is equally popular in Sri Lanka as well. This is usually served with Sambar / Coconut Chutney or with curd as as Dahi Vada, as a chat snack. Here I share with a very perfect recipe for our viewers to make a very crispy and soft restaurant style vada at home, using a mixi, with all the tips and tricks for you to follow. Enjoy the crispiest Uzhunnu Vada with an easy perfect combination of thick coconut chutney….Enjoy !!!)

Ingredients - (Coconut Chutney)

Coconut - 1 cup
Curry Leaves - 3-4
Green Chilly - 2 nos
Salt - to taste
Thick Curd / yoghurt - 2 tbsp
Coconut Oil - 1 tsp
Ginger - 1 small pc

Method of preparation

Grind all the ingredients in the dry mixer jar, without adding water to get a thick chutney.

Ingredients - (Uzhunnu Vada)
Un-split Urad Dal - 2 cups (500 gms)
(Wash very well and soak in water for 2 hours in the refrigerator and drain the dal)
Green Chilly - 2 nos (finely chopped)
Ginger - 1 small pc (finely chopped)
Asafetida powder - ¼ tsp
Salt - to taste
Baking Soda - ¼ tsp
Roasted Rice Flour - 1 tbsp
Pepper (crushed) - 1 tbsp
Curry Leaf - 1 stalk (finely Chopped)
Onion - 1 no small (chopped)
Oil - As needed for frying

Method of preparation

Grind the urad dal using a mixer jar / grinder. Using the mixi jar, grind it in small batches, if possible, without adding water. Make sure the batter is not ground to fine paste. Make it slightly course and thick batter as shown in the video, to make get the crispy vadas. Once the batter is done, using a spoon or hand whisk, mix the batter very well as shown, in the same direction if possible for 5-7 minutes, to get the fluffiest and light batter as possible. Add the baking soda and mix well again. A drop of batter should float on water, which is the desired texture as needed. Now keeping the batter closed, refrigerate for 15-20 minutes. Now add the chopped green chillies, chopped curry leaves, crushed pepper, chopped ginger and the asafetida powder and mix well again. Now just before making the vada, you may add the salt, onion and the rice powder and mix well again. Check the salt level at this stage.
Keep a pan with enough oil to immerse the vadas. Once the oil is really hot, keeping on low to medium flame, after completely wetting the palms, shape the vadas as shown in the video and detach into the pan. Turning both sides, get the vadas, crispy fried golden brown colour from outside and softly cooked from inside as shown.
Now you can enjoy the Crispy Uzhunnu Vada / Medhu Vada with the perfect Coconut Chutney at your family tea time…. Enjoy !!!!

TIPS :

1. Select the best quality Urad Dal
2. If you are using a mixie for grinding, make sure you soak the dal in fridge, which can avoid, heating of mixie and thereby getting the batter hot.
3. Always grind the batter into slightly coarse batter and not very smooth, which gives crispiness for the vadas
4. Mix the batter very well for 5-7 minutes as shown in the video, which makes the batter soft, fluffy & light.
5. Keeping the batter in fridge for 5-7 minutes, helps the batter to get thicker, to shape the vadas well.
6. Make sure you add the onion and salt, just before the vada making process.
7. Adding Baking Soda and Rice Flour gives extra restaurant style crispiness and colour for the vadas.
