Ingredients:
3/4 cup (60g) unsweetened cocoa powder
1/2 cup (95g) brown sugar, packed
1/2 cup (95g) granulated sugar
1/4 cup (50ml) vegetable oil
2 large eggs
1 cup (125g) all-purpose flour
1 teaspoon (5g) baking powder
1/2 teaspoon (3g) salt
Optional add-ins: orange zest, ground cinnamon (1/2 tsp), vanilla extract (1/2 tsp)
For Rolling: 1/2 cup icing sugar (60 grams)

Instructions:
1. In a large bowl, mix together the unsweetened cocoa powder, both the sugars, and oil until well combined.
2. Add the eggs one at a time, mixing thoroughly after each addition. You can add 1/2 tsp of vanilla extract at this point (optional).
3. In a separate bowl, combine the all-purpose flour, baking soda and pinch of salt. If using, you can add in orange zest or ground cinnamon for extra flavor.
4. Gradually add the dry ingredients to the cocoa mixture, stirring until a soft dough forms.
5. Chill the dough in the refrigerator for at least 4 hours. Alternatively, chill it overnight for a better texture.
6. Preheat your oven to 185°C (365°F) and line a baking sheet with parchment paper or baking mat.
7. Take around 1.5 teaspoons of dough and roll it into balls. Mine were 35-40g each.
8. Roll each ball in icing sugar, coating VERY generously. You can even double coat them if you wish. Place the coated balls on the prepared baking sheet, spacing them about 2 inches apart.
9. Bake for 10 minutes or until the edges are set. The centers will remain soft. Do not over-bake them.
10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
