This is the epitome of the Nose To Tail ethos.Using everything but the squeal.
I take one whole pigs head and make 3 delicious dishes from it. Firstly, i cured the main part of the pigs head and made a brawn/headcheese.The brains i breaded,fried in a sage butter and served on toast, then the ears were poached until soft, coated in a southern seasoning mix and deep fried.
They make an absolutely superb snack, great washed down with an ice cold beer.
