Mushroom Kalimirch - Peppery , packed with Umami goodness and rich creamy gravy! ✨

My mom doesn’t eat mushrooms so I try to cook different recipes to convince her to eat it! 🙃 and her reaction is at the end!

Ingredients:
350gm mushrooms - scrub with wholewheat flour, rinse under running water and cut in half
1.5 tbsp black peppercorns - Dry Roast and grind to a coarse powder
For White Gravy:
4 onions - cut in 4
3 green chillis
1.5 inch ginger
7-8 garlic cloves
15gm cashews
1 cup water
1 tbsp oil

For spice mix: 1/2 cup curd , salt as per taste , 1/2 tsp sugar, 1.5 tbsp coriander powder , 1 tsp cumin powder and 1/2 tsp garam masala - Whisk till silky smooth
2 tbsp oil
15-20 gm butter
chopped coriander leaves for garnish

Cooking the gravy:
Heat oil
Saute the onions, ginger , garlic , green chillis with cashew for 1 min
Add a cup for water
Cover and cook till water reduces to 1/4th
Let it cool to room temperature and make a paste

Cooking:
Heat oil
Temper with 6-7 black peppercorns
Add the gravy paste and cook for 10 minutes
Add the spice mix and cook till oil separates
Add the mushrooms with 3/4th of the pepper powder
Cover and cook for 15 minutes till the mushrooms release water and it’s almost done
Add butter and cook for 2 minutes . Adjust salt if needed
Finish with pepper powder and chopped coriander
