🍫GF Sweet Potato Chocolate Brownies
Ingredients:
• 3 eggs
• 220-300 g raw sweet potato (Use the rest to roast them in the oven!)
• 100 g dark chocolate (at least 70%)
• 0,75 dl honey or maple syrup
• 1 heaping tbsp coconut oil
• 2 heaping tbsp almond flour (or oat flour)
• 2-3 tbsp raw cocoa powder, depending on desired chocolate flavor
• 1 tsp baking powder
• 1/2 tsp pink Himalayan salt
• 1 tsp vanilla powder

Instructions:
• Peel the sweet potato, cut into cubes, and boil until completely soft. Allow to cool, then blend into a smooth paste or mash with a fork.
• Whisk the eggs and honey until light and fluffy.
• Melt the chocolate and coconut oil in a double boiler until smooth. Let it cool slightly, then mix with the egg-honey mixture.
• In a separate bowl, combine the almond flour, cacao powder, baking powder, salt, and vanilla powder.
• Gradually add the dry mixture to the wet ingredients, stirring until combined.
• Fold in the mashed sweet potato gently.
• Pour into a 28×18 cm baking pan lined with coconut oil and bake at 160°C (320°F) for 40-45 minutes. Adjust baking time if using a larger pan. Check doneness with a toothpick.

🍫Avocado Chocolate Cream
Ingredients:
• 2 large, very ripe avocados
• 2-3 tbsp raw cocoa powder
• 4 soft dates or few tsp of honey/maple syrup
• 1 tbsp of coconut oil
• optional: a splash of plant-based milk

Instructions:
• Cut the avocados in half and remove the pits. Scoop the flesh into a food processor or blender.
• Add the remaining ingredients and blend until smooth.
