Crispy Hash Browns by NatashasKitchen.com (adapted to include a cheese option)
Ingredients:
• 1¼ lbs red potatoes (or another waxy potato)
• ½ teaspoon onion powder
• 2 tablespoons olive oil
• 2 tablespoons butter, divided
• Salt and pepper
• 6 ounces shredded cheddar cheese
• Sour cream, chives, ketchup to garnish

Directions:
1. Peel potatoes and chop with KitchenAid Go™ Cordless System Food Chopper. Use cheesecloth to wring out as much liquid from the potatoes as possible. Divide in two portions: sprinkle one set of potatoes with onion powder and stir to combine. Add cheese to the other set of potatoes and stir to combine.
2. Heat a large cast iron skillet over medium heat and once it's hot (not smoking), add 1 Tbsp oil and 1 Tbsp butter.
3. Add potatoes in a single layer. Let potatoes sauté undisturbed until the bottom is browned and crisped up, about 6 minutes. Sprinkle the top with salt and pepper to taste.
4. Flip the hash browns. Sprinkle again with salt and pepper on the second side. If the hash browns don’t flip easily as a single disk, use a pizza cutter to cut in half or quarters then flip individual pieces.
5. Drizzle 1 Tbsp oil around the edges and dot the edges with butter. Sauté without stirring until the potatoes are golden brown and crisp on the second side, another 6 minutes. Remove from heat and serve.
6. Yum.

Bonus recipe! A simple smoothie! Add all ingredients to the jar of your KitchenAid Go™ Cordless System Personal Blender: almond milk, banana, berries/mango, 1 Tbsp ground flaxseed, 1 Tbsp almond butter, ice. Blend. YUM.
