Hello friends! Welcome to my kitchen, Kathiawadi Swad. I’m Bhavnaben Rathod, and today we’re making a delicious Lemon Sweet and Sour Chutney that pairs perfectly with whole parathas or bhakhri roti. This chutney is so delightful that once you make it, you’ll want to prepare it again and again!

🥗 Ingredients:
250 grams of lemons (washed and wiped)
250 grams of sugar (can be adjusted to 300 grams for less sourness)
Water (enough to submerge the sugar)
3 tablespoons of Kashmiri red chili powder (optional for spice)
1 teaspoon of fennel seeds
Fresh coriander leaves
2-3 teaspoons of salt
🥄 Method:
1. *Prepare the Lemons*: Cut the washed lemons into pieces, removing seeds and fiber.
2. *Grind the Lemons*: Place the lemon pieces in a mixer jar and grind them roughly.
3. *Make Sugar Syrup*: In a pan, add sugar and enough water to submerge it. Heat on medium flame until the sugar dissolves completely.
4. *Check Syrup Consistency*: Stir until the syrup forms a string consistency.
5. *Combine Ingredients*: Add the ground lemon mixture to the syrup and mix well.
6. *Add Spices*: Once the bubbles reduce, add coriander leaves, fennel seeds, and chili powder (after turning off the flame).
7. *Cool and Store*: Let the chutney cool completely before transferring it to a clean, dry glass bottle.
